Question Regarding Escrow Service

I tried doing some Google-fu and found this thread which asks a similar question which wasn't answered. While an escrow service is great, what protection would we as a seller have in case they get the item and it is as advertised, but still disputes it to get their money back?
 
The buyer has 72 hrs after a transaction is completed to report problems. The payment is not withdrawable by the seller during this time. After 72 hrs, the payment is released and the seller can withdraw it. If the buyer tries to dispute the payment after that, the seller is protected. However I can't guarantee that will always be the case because Trustap is a separate company. Their policies could change in the future.

what is the process for the seller to withdraw the money
