So first you'll need to be at the point where you are finalizing your trade.
Step1. Make sure all your windows are neat and you only have the necessary windows open. ([url removed - Ace], Account Page , AIM).
Step2. If you are still having doubts about a possible scammer. Make sure you have your parental controls page open.
Step3. If the account password is changed on you mid-trade, you can go to the parental control page and quickly set it up to 0 playtime providing some security to your account.
So overview:
Make sure you have https://www.worldofwarcraft.com/account/parental-control-schedule.html open at all times in a seperate window when trading.
This effectively stops the scammer from logging into your character and deleting/de'ing/vendoring/transfering items. Of course it does not protect you against transfers. Only way to change the parental e-mail (you get to setit yourself when setting up) is to call blizzard in too, so this is good for those offhour trades.
