All story completed, haven't attempted Varkyn yet so more rubies attainable via that cup fight. Also haven't attempted any 100 npcs so more rubies and influence is attainable.

Rubies- 4.5k, Veterans Sacred Seal x48, Veterans Sacred Seal x3, Gold Guidstones x1415 so you can lvl up anyone pretty well.

Also have Adelle and Odette limited accessories with 8x Sage Brooch II as i purchased most special packs up to Adelle.
