Wicked trick for steaks that is pretty much only known to us jedi in China:
Pour some vodka on it and wait about ten minutes.
The alcohol acts as a tenderizer, and can also carry flavor (i.e. alcohol is great in rubs by allowing the rub to be able to penetrate the cellular structure.)
