You can take on any gym with plenty of high-level and hard to obtain Pokemon, or just show off to your friends/rivals. 140 Pokemon caught only a few more left to get such as, Muk, Weezing, Chancey, Farfetch'd, Mr. Mime. The rest have not been released.
There is plenty of Pokemon Candy for levelling up your Pokemon so there is still plenty for you to do.
