What are you doing with each toon ? Kinda hard to give you proffesion choices if I don't know what you plan to do with the toon like PvP or PvE

pally = Blacksmithing JC
Rogue = Engineering JC
lock = Enchanting JC
priest enchanting JC
DK Mining or blacksmithing and JC
warrior = jewel crafting and blacksmithing
mage = Enchanting and JC

GL leveling all those to 80 ...

Don't pick JC on multi chars, you should pick profs to compliment each other, I have 3 80's and they each have a prof that will compliment the other.
If you do this, you will rack in the gold fast as hell.

If hes PvEing on all his toons , JC is the best Min max Profession , ALL your classes if your PvEing on them should be JC.

QFT Also Blacksmithing is a really good min max coz it allows you to min max any stat you want, like gem sockets can be socketed with any stat or even a combo of stats, so therefore is most likely the best way of min maxing

yea , I only put those other ones because of the classes and what gems hed be using , so Enchanting would be better.

My main goal is to get 7 toons to 80 before the exp . And to have 450 professions and 2nd professions etc , cooking / fishing.. Its so tuff

I would just try to vary the professions as to not repeat any.

Class to tradeskill is an arbitrary matchup. I'd suggest reading some tradeskill guides.
Just hit up all of the professions by pairing them naturally on every character. With a full spread, you can dominate the tradeskilling market.
