Any way to use a different wallet for bitcoin escrow?

It's not Bitpay's fees, it's bitcoin fees in general. It does not matter what wallet you uses, the fees will be the same.

You can see in this chart fees have been $4+ since Oct 20th, hitting a max of about $13 in early Nov, but are now coming down back to around $2-3.
Bitcoin fees normally spike 2-3 per year, so when this happens there's not much you can do.
