A middleman generally helps ensure both parties complete the transaction safely. They may check the account details, confirm the seller has access, and make sure the buyer receives what's advertised before payment is released.
As for verifying the OGE (Original Email), that depends on the middleman and what evidence they can check. Even then, there's no guaranteed way for them to confirm the account can never be recovered.
You can always ask the middleman if they're willing to perform additional checks before proceeding.
Just keep in mind that using a middleman doesn't eliminate the risk of an account being reclaimed by its original owner through Riot Support.
But it might be best to ask a middleman here on EpicNPC who is familiar with LOL

Generally the only way to tell if an email is OGE is to check for the original game registration email in the inbox. If the OGE is being provided, the MM will look for that email to confirm. If they can't find it, they will tell the buyer they're unable to confirm and ask if they want to continue or cancel.
