Other proof: After 4 days i got automatically logged out for safety reasons and then the mail changed as well as the password ofcourse.
To retrieve your account without needing the new user's email you can send a message to Account Retrieval of Genshin Impact, if you provide all the info from in-game so only known by the previous user, you can reclaim the account and chang the email.
